Strawberry Caramel Ganache

Demonstrated at the New Forest and Hampshire County Show 2023, by Bartley Lodge Pastry Chef, Maja Palmer, this sweet treat is the perfect light bite for any occasion or simply just because and is certainly a crowd pleaser amoungst friends.

You’ll need

Method:

  1. Melt the chocolate in a bowl over a pan of boiling water, being careful not to scald yourself. Remove the bowl from the heat.
  2. In a small pan, bring the cream and strawberry puree almost to the boil, and set aside
  3. In another saucepan, carefully melt the sugar to golden caramel and remove from the heart. Gradually whisk in the strawberry cream, then add the glucose
  4. Pour the strawberry caramel into the melted chocolate, stirring in the middle of the bowl. Stir until smooth and glossy, then add salt to enhance the flavor.
  5. Leave to cool down
