Gnocchi

Demonstrated at the New Forest and Hampshire County Show 2023, by Forest Lodge Chef, Bradley Bennett, enjoy the taste of Italy, with a New Forest twist with this delicious gnocchi recipe.

You’ll need

Method:

  1. Boil the potatoes for around 45 minutes and then peel. Mash the potatoes in a bowl, add the flour (keep some flour back for rolling) season the mix with salt and pepper.
  2. Add the beaten egg and mix well, on a floured table, knead the ingredients lightly
  3. Form into long cylinder shapes. The gnocchi should have a light texture which is cohesive enough to hold in boiling water.
  4. If the mixture is too wet, add some more flour until the proper consistency has been achieved
  5. Cut the long cylinders into 1-inch pieces
  6. Using your fingertops, crimp the gnocchi into marquis shaped dumplings.
  7. Poach in boiling water till they float ( around 3 mins), serve with desired sauce dressing
