Forest to Fork; New Forest Shortbread

This October we return with our fifth episode of Forest to Fork; New Forest Shortbread, which follows the story of Tracy Thew, owner of New Forest Shortbread, and her baking brigade at her Burley Rails home.
We joined Tracy and her team in September after a busy summer of markets, county fayres and of course lots of baking. As we were welcomed into her cottage there was a delightfully warm atmosphere. We could hear the team, Monica and Sarah, giggling to each other as we were toured around Tracy’s quintessential New Forest cottage. It is here, each batch of New Forest Shortbread is hand made. The team have spent countless hours perfecting their simple recipe, with each having their preferred jobs, whether that be sealing, making or rolling.
Tracy’s top tips: New Forest Shortbread can be enjoyed in a number of ways, of course you have your traditional tea dunking, but have you tried shortbread with jam & cream, or perhaps as a cheesecake base?
We can’t get enough of New Forest Shortbread, having featured the business in our Shop Small Saturday in May, as well as gifting boxes to customers during their stay and offering the shortbread as a tasty memento to take home or gift to their family.
