Gnocchi

Demonstrated at the New Forest and Hampshire County Show 2023, by Forest Lodge Chef, Bradley Bennett, enjoy the taste of Italy, with a New Forest twist with this delicious gnocchi recipe.
You’ll need
- 400g mashed potato
- 200g plain flour
- 1 egg
- salt and pepper
Method:
- Boil the potatoes for around 45 minutes and then peel. Mash the potatoes in a bowl, add the flour (keep some flour back for rolling) season the mix with salt and pepper.
- Add the beaten egg and mix well, on a floured table, knead the ingredients lightly
- Form into long cylinder shapes. The gnocchi should have a light texture which is cohesive enough to hold in boiling water.
- If the mixture is too wet, add some more flour until the proper consistency has been achieved
- Cut the long cylinders into 1-inch pieces
- Using your fingertops, crimp the gnocchi into marquis shaped dumplings.
- Poach in boiling water till they float ( around 3 mins), serve with desired sauce dressing
