Chocolate & Raspberry Dessert

In celebration of World Chocolate Day we’re celebrating Maja Palmer, Bartley Lodge’s Pastry Chef and resident chocolatier. She has crafted a beautiful Chocolate & Raspberry dessert, which contains many elements of different chocolates. Such as glazed white chocolate & raspberry mousse, aerated chocolate, chocolate soil, dark chocolate mousse, chocolate soil, chocolate cremeux, white chocolate namelaka, raspberry gel and fresh New Forest raspberries.
A delicate dessert, beautifully presented and jam packed with delicious flavour.
You’ll need
- 9 eggs, beat till stiff
- 18 oz chocolate, melt
- 3/4 pt whipped cream
Method:
- Fold chocolate into eggs, fold cream.
- Leave to set in the fridge
