Ingredients needed to make a sweet Afternoon Tea
While every afternoon tea recipe may differ slightly, there are a few things that are always present: delicious scones with jam and cream and a comforting cup of tea. Below we’re going to provide you with a traditional sweet afternoon tea recipe for how to prepare your fluffy, traditional scones and the tea.
Ingredients:
- For the scones:
- 250g all-purpose flour
- 75g caster sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 85g unsalted butter, chilled and cut into small pieces
- 120ml whole milk
- 1 large egg
- 1 teaspoon vanilla extract
- 75g dried fruit (such as raisins or cranberries), optional
- For the tea and cakes:
- Your favourite tea blend
- 100g caster sugar
- 115g unsalted butter, at room temperature
- 2 large eggs
- 180g all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 120ml whole milk
- 1/2 teaspoon vanilla extract
Step-by-step instructions to make a sweet Afternoon Tea
Instructions:
- Preheat your oven to 200°C (400°F).
- To make the scones, in a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until the mixture comes together. Fold in the dried fruit, if using.
- Turn the dough out onto a lightly floured surface and knead gently until it comes together. Roll the dough out to a thickness of about 2.5 cm (1 inch). Use a biscuit cutter or the rim of a drinking glass to cut out rounds of dough.
- Place the scones on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown. Remove from the oven and let cool for a few minutes before serving.
- While the scones are baking, make the tea and cakes. Brew your favourite tea blend and set it aside to steep.
- In a large bowl, cream together the sugar and butter until light and fluffy. Add the eggs, one at a time, and beat until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients, alternating with the milk, and mix until well combined. Stir in the vanilla extract.
- Pour the batter into a greased 23 cm (9 inch) round cake pan and smooth the top with a spatula.
- Bake the cake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve the scones and cake with your freshly brewed tea. Enjoy your sweet afternoon tea with your loved ones!
