Fluffy gluten & dairy-free cupcakes
310g butter (unsalted)
120g caster sugar
1. Preheat the oven to 150°c.
2. Line 8 muffins cups with paper or silicone liners, spray insides of cups with nonstick cooking spray.
3. In a large bowl mix the flour, baking powder & salt until blended. Whisk in the eggs, honey, milk, oil & vanilla until completely smooth.
4. Divide the mixture equally among the prepared muffins cups.
5. Bake for about 20min or until golden.
6. Transfer baking tin to wire rack and cool for 10 min.
Decorate & enjoy!
