The main responsibility of the role is to broadly deliver what is required by the company keeping the food offer relevant at which ever site you are supporting. To maintain the management and performance of each kitchen team where relevant. To drive sales margins and maintain high standards and quality whilst protecting the budget set out by the company through diligent cost control. The role has responsibility for supporting all venue Head Chef’s to ensure their kitchens are fully health and safety compliant including enforcing processes that ensure allergen and food hygiene standards are met at all times.


Support the food vision and development of the collections events and restaurant/pub kitchens

  • Menu development & implementation with Managing Director and site Head Chefs ensuring that dishes are operationally efficient and within the capabilities of the team to the relevant aa rosette status
  • Financially delivering (sales growth & GP’s) within the company`s planning software
  • Maximising the menu through utilizing the current suppliers with seasonal ingredients
  • Developing & training our Kitchen team – (Chefs all levels to KP)
  • Reviewing guest feedback for the food and making changes where necessary

Implement the fundamentals of kitchen practice across the site – Implementation & Development

  • Adhering to health and safety guidelines – implementing COSHH & Risk Assessment training
  • Maintaining our 5 Star scores on the doors results with environmental health in our kitchen areas
  • Following our HACCP Policy and implementing the food safety standards on a day to day basis
  • Ensure all staff are trained on allergen specific information
  • Ensuring kitchen hygiene is adhered to as per our food safety auditors guidelines and monthly reports
  • Maintaining a Professional approach at all times with an emphasis on teamwork
  • Chef recruitment and Conducting Chef inductions, assessments and probations
  • Effective management of Kitchen Staff Duties including preparing and managing rotas
  • Costings for all menus utilising our online procurement tool including the development and support of key seasonal group menus
  • Maintaining Recipe cards / Dish spec sheets are up to date & accurate
  • Ensuring our team are developed through our appraisal process
  • Ensuring Mentorship to our Apprentice chefs through our apprenticeship agreement
  • Resolving poor performance through our development plans
  • Implement daily briefings / Weekly meetings / Monthly debriefs to implement change

When running the kitchen the following will need to take place

  • Practical approach who will always enjoy getting ‘hands on’ in the kitchen
  • Enthusiastic and dynamic, willing to exceed customer expectations
  • Follow company SOP`s as per our company standards
  • An ability to take people with you – good interpersonal leadership and communication skills
  • Strong organizational skills / time management / analytical and numerical ability within a multi outlet environment

Qualifications & experience

GCSE (or equivalent qualification) in Math’s and English

N.V.Q Level 2 – Professional Cookery (or equivalent apprenticeship)

N.V.Q Level 2 – Pastry (or equivalent)

Minimum Level 2 Food Safety Certificate (Level 3 is preferable)

Extensive knowledge and understanding of Microsoft Excel, Word and Outlook

Knowledge of Procure Wizard (not essential)
